Zaragoza's local cooking is Aragonese cuisine which is one of the most straightforward and wholesome in Spain, with specialities including lamb and goat roasted on the spit, lamb and vegetable stew, las magras con tomate (slices of fried ham dipped in tomato sauce), bacalao al ajoarriero (cod with garlic and eggs), pollo a la chilindron (chicken in a cured ham sauce), recao (beans, potatoes and rice) and huevos al salmorejo (eggs with asparagus sauce). Make sure you try borrajas, a vegetable which can only be found in Aragon which is usually eaten with olive oil. Many menus have dishes featuring wild boar and pheasant.
Desserts range from fresh locally grown fruit grown to sweets like turrones, mostillo, roscones (ring-shaped cakes) and el guirlache(almond brittle). There is also an exotic "drunk" peach or pear cured in wine in the earthenware vats of Carinera.

Los Borrachos is an old traditional restaurant which occupies a formal set of dining rooms near the centre of town. Dishes on offer include a combination platter of hake with lobster, wild boar with wine sauce, filet of beef with a pepper and cognac sauce and an asparagus mousse with strips of Serrano ham.

This is one of the top seafood restaurants in town with a menu which might include peppers stuffed with seafood mouse, sea bream baked in a salt crust, baked sea bream, turbot with clams, grilled hake or monkfish, grilled squid or shellfish soup. If you don not feel like fish then try the grilled beefsteak with several kinds of sauces.

One of the best restaurants in town serving unusual dishes including fried rabbit with snails. Oven-roasted lamb or lamb hock can be ordered in advance but lamb skewers are always available. Fresh fish is always on the menu here: hake, grilled sole, sea bream and salmon, and veal is featured heavily with wild boar and veal ribs, as well as meatballs in a bean stew. Desserts are all homemade.

One of Zaragoza's most consistent restaurants located in a 1970s building in the busy commercial zone, a short walk from El Corte Inglés Department store and lots of other shops and boutiques. Specialities include fresh fish, pork, veal, and beefsteaks as well as a roast suckling lamb prepared with herbs and vegetables. Merluza Risko Mar (hake served with fresh clams, baby eels, and green sauce) is a celebrated house specialty.
If you are planning to explore the area outside of the city centre and play some golf or go to some of the more out of the way places then you might consider hiring a car.
